Today I’m sharing my favorite recipe for the best jerk chicken marinade that is sugar-free and low carb. This recipe is perfect for those of us who want to keep our carb intake low but still enjoy delicious food!
Ingredients:
- 2 lbs chicken thighs or drumsticks
- 1/2 cup olive oil
- 1/4 cup apple cider vinegar
- 3 tbsp fresh lime juice
- 1 tbsp minced garlic
- 1 tbsp cinnamon
- 1 tbsp allspice
- 1 tbsp smoked paprika
- 1 tbsp cayenne pepper
- 1 tbsp dried thyme
- 1 tsp salt
- 1 tsp black pepper
Instructions:
- Mix all ingredients (except chicken) together in a large bowl to form the marinade.
- Add chicken to the bowl and ensure that the marinade covers all sides of the chicken.
- Cover the bowl and let the chicken marinate overnight in the refrigerator.
- Preheat the oven to 375F and prepare a baking sheet with parchment paper.
- Place the chicken on the baking sheet and bake for 25-30 minutes or until chicken is cooked through.
