Ohh, today I’m going to share with you a recipe that is full of exotic flavors and spices. It’s a Jamaican favorite: Jerk Chicken! I recently stumbled upon this recipe and decided to give it a try, and boy was it a hit in my house! This recipe is perfect for family dinners, barbecues, or even a potluck feast!
Jamaican Jerk Chicken
Ingredients:
- 2 pounds chicken thighs, bone-in and skin-on
- 2 tablespoons olive oil
- 1/2 cup soy sauce
- 1/2 cup apple cider vinegar
- 2 tablespoons honey
- 2 tablespoons dark rum
- 2 tablespoons dried thyme
- 1 tablespoon ground allspice
- 1 tablespoon ground cinnamon
- 1 tablespoon ground nutmeg
- 1 tablespoon smoked paprika
- 1 tablespoon ground black pepper
- 1 tablespoon kosher salt
- 4 cloves garlic, minced
- 2 scallions, chopped
- 1 jalapeno, seeded and minced
- 2 tablespoons chopped fresh ginger
Instructions:
- Combine the soy sauce, apple cider vinegar, honey, dark rum, olive oil, thyme, allspice, cinnamon, nutmeg, smoked paprika, black pepper, kosher salt, garlic, scallions, jalapeno, and ginger in a bowl.
- Pour the marinade over the chicken thighs and massage the marinade into the meat.
- Cover the chicken and refrigerate for at least 4 hours, or overnight.
- Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard the excess marinade.
- Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F.
- Remove the chicken from the grill and let it rest for 5 minutes before serving.
Jerk Chicken Marinade
Ingredients:
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar
- 1 lime, juiced
- 1 tablespoon dark rum
- 1 tablespoon chopped fresh thyme
- 1 tablespoon ground allspice
- 1/2 tablespoon kosher salt
- 1/2 tablespoon black pepper
- 1 red onion, chopped
- 3 cloves garlic, roughly chopped
- 1 Scotch bonnet chili, seeded and chopped
Instructions:
- Combine all the ingredients in a blender or food processor and blend until smooth.
- Pour the marinade over chicken and rub it in well.
- Cover and refrigerate for at least 1 hour before cooking.
