Jerk Chicken Recipe #1
Ingredients
- 1 medium onion, chopped
- 4 garlic cloves, chopped
- 2-3 Scotch bonnet or habanero peppers, seeded and chopped
- 1 tablespoon fresh thyme leaves
- 2 teaspoons ground allspice
- 1 teaspoon ground cinnamon
- 1 teaspoon freshly grated nutmeg
- 1/2 cup soy sauce
- 1/4 cup vegetable oil
- 3 tablespoons brown sugar
- 2 tablespoons freshly squeezed lime juice
- 8-10 chicken drumsticks or thighs
Instructions
- In a blender or food processor, combine the onion, garlic, peppers, thyme, allspice, cinnamon, nutmeg, soy sauce, vegetable oil, brown sugar, and lime juice. Blend until smooth.
- Place the chicken in a large bowl or resealable plastic bag. Pour the jerk marinade over the chicken, making sure to coat all pieces well. Cover and refrigerate for at least 6 hours, or overnight.
- Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard any excess marinade.
- Grill the chicken for 6-7 minutes per side, or until cooked through and the juices run clear.
- Serve hot with rice, beans, and your favorite Caribbean sides.

- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 teaspoons smoked paprika
- 2 teaspoons cayenne pepper
- 2 teaspoons ground allspice
- 2 teaspoons dried thyme
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 limes, zested and juiced
- 2 tablespoons vegetable oil
- 1 tablespoon honey
- 8-10 chicken drumsticks or thighs
Instructions
- Preheat the oven to 375F.
- In a small bowl, combine the garlic powder, onion powder, smoked paprika, cayenne pepper, allspice, dried thyme, kosher salt, black pepper, and lime zest.
- In a large bowl, whisk together the lime juice, vegetable oil, and honey.
- Add the chicken to the bowl and toss to coat with the marinade. Add the spice rub and toss again to coat.
- Arrange the chicken on a baking sheet lined with parchment paper.
- Bake for 35-40 minutes, or until the chicken is cooked through and the juices run clear.
- Serve hot with your favorite sides.
