Ingredients:
- 1 lb. crab meat
- 1/2 cup breadcrumbs
- 1/4 cup mayo
- 2 tbsp. Dijon mustard
- 1 tbsp. Worcestershire sauce
- 1 tbsp. Old Bay seasoning
- 1 carrot, grated
- 1 celery stalk, diced
- 1/2 onion, diced
- 2 cloves garlic, minced
- 12 egg roll wrappers
- Oil for frying
Instructions:
- In a large mixing bowl, combine the crab meat, breadcrumbs, mayo, Dijon mustard, Worcestershire sauce, and Old Bay seasoning. Fold in the grated carrot, diced celery, onion, and minced garlic.
- Lay out an egg roll wrapper and spoon 2 tablespoons of the crab mixture into the center. Roll up the egg roll and seal the edges with water.
- In a deep frying pan or Dutch oven, heat the oil to 350°F. Fry the egg rolls, in batches, for 4-5 minutes or until golden brown and crispy.
- Remove the egg rolls from the oil and let drain on a paper towel-lined plate. Serve hot with your favorite dipping sauce.
