For the Chocolate Crepes:
– 1 1/2 cups all-purpose flour
– 1/4 cup unsweetened cocoa powder

– 2 cups whole milk

For the Chocolate Ganache:
– 1/2 cup heavy cream
– 1/2 cup semisweet chocolate chips
To make the crepes, whisk together the flour, cocoa powder, sugar, and salt in a large bowl. In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and whisk until a smooth batter forms.
Heat a non-stick pan over medium heat. Pour a 1/4-cup measure of batter onto the pan, and spread the batter into a thin layer using the back of a spoon. Cook the crepe until the edges are dry and the bottom is lightly browned, then flip and cook the other side for another 10 seconds.
Repeat the process until all the batter is used up, making sure to stack the crepes on a plate with a piece of parchment paper between each one.

To make the chocolate ganache, heat the heavy cream in a saucepan until it just begins to steam. Remove from heat and add the chocolate chips, stirring until the chocolate has completely melted and the mixture is smooth.
Once the cake is chilled, pour the chocolate ganache over the top of the cake, allowing it to drip down the sides. Refrigerate the cake again until the ganache has set.
