Today, I am sharing with you two of my absolute favorite potato recipes – twice baked potatoes and Mediterranean baked sweet potatoes. These dishes combine the heartiness of potatoes with the flavors of different herbs and spices, making them hearty yet flavorful. Here’s how to prepare these yummy dishes at home:
Twice Baked Potatoes
Begin by preheating your oven to 400ºF. Cut 4 large baking potatoes in half and scoop out the insides, leaving a thin layer of potato on each side. Mix together the potato insides, 1/2 cup of sour cream, 1/2 cup of milk, 1/2 stick of melted butter, 1/2 cup of shredded cheddar cheese, salt, and pepper to taste. Stuff each potato with this mixture and bake in the oven for 20-25 minutes. Top with extra cheese and put back in the oven for a few minutes until melted.
These potatoes are perfect for a family meal or for entertaining! They are simple to make but elegant enough to serve for a special occasion.
Mediterranean Baked Sweet Potatoes
To make these flavorful sweet potatoes, begin by washing and scrubbing 4 sweet potatoes. Preheat your oven to 400ºF. Prick each potato with a fork a few times and then place on a baking sheet. Bake for 45-50 minutes until soft.
While the sweet potatoes are baking, prepare the topping. In a bowl, mix together 1 can of chickpeas (drained), 1/4 cup of sliced kalamata olives, 2 tablespoons of capers, 1/2 teaspoon of dried oregano, 1/4 teaspoon of garlic powder, 1/4 teaspoon of onion powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
Once the sweet potatoes are done, slice them open and top with the chickpea mixture. Drizzle with some olive oil and return to the oven for 5-10 minutes until the topping is warmed through.
