- 4 large baking potatoes

- Preheat your oven to 400°F.
- Wash and scrub your potatoes, then prick them all over with a fork.
- Bake the potatoes in the preheated oven for 45-50 minutes, or until fork-tender.
- In a separate pot, steam your chopped broccoli until tender, about 5 minutes. Drain the water and set aside.
- Once the potatoes are done, slice them in half and let them cool slightly.
- Using a spoon, scoop the potato out of the skins into a large bowl, leaving about 1/4 inch of potato in the skin to create a shell.
- Mash the potato with a fork or potato masher until there are no large lumps.
- Add in the sour cream, milk, salt, and pepper and stir until fully combined.
- Add in the steamed broccoli and 3/4 cup of the shredded cheddar cheese. Stir until fully combined.
- Using a spoon, fill the potato shells with the broccoli cheese filling until it is fully heaped on top.
