The holiday season is upon us and what better way to celebrate than with a classic pecan pie? I’ve found the absolute best recipe and I’m excited to share it with you all.
Ingredients
For the Crust:
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon kosher salt
- 1/2 teaspoon granulated sugar
- 1/2 cup unsalted butter, chilled and cut into small cubes
- 2-4 tablespoons ice water
For the Filling:
- 1 cup granulated sugar
- 3/4 cup light corn syrup
- 1/3 cup unsalted butter, melted
- 3 large eggs, beaten
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon kosher salt
- 2 cups pecan halves
Instructions
For the Crust:
- In a large bowl, whisk together the flour, salt, and sugar until well combined.
- Add the butter and using a pastry blender or your hands, cut the butter into the flour mixture until it resembles coarse sand.
- Drizzle in the ice water, 1 tablespoon at a time, until the dough comes together and is no longer dry.
- Transfer the dough to a floured surface and shape it into a disk. Wrap it in plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 375°F.
- Roll the dough out on a floured surface into a 12-inch circle. Transfer the dough to a 9-inch pie dish and trim the edges. Crimp the edges with a fork or your fingers to create a decorative edge. Place the crust in the refrigerator while making the filling.
For the Filling:
- In a large bowl, whisk together the sugar, corn syrup, melted butter, eggs, vanilla, and salt until well combined.
- Stir in the pecan halves.
- Pour the filling into the prepared crust.
- Bake for 45-50 minutes or until the filling is set and the crust is golden brown. If the edges of the crust start to brown too quickly, cover them with strips of foil.
Let the pie cool completely before serving. Serve with whipped cream or vanilla ice cream for the perfect holiday dessert. Enjoy!
