Yo what’s good fam? Today I’m gonna hook y’all up with a straight-up delicious recipe for roasted butternut squash. This dish is perfect for Thanksgiving or any other special occasion where you want to impress your loved ones with your culinary skills.
First up, let’s talk about the ingredients. You’re gonna need one big ol’ butternut squash, some fresh thyme, olive oil, salt, and pepper. That’s it! Simple, yet so damn tasty.
Now let’s get down to business. Preheat your oven to 400 degrees F. While that’s heating up, peel the squash and chop it up into medium-sized pieces. Make sure you remove all the seeds and guts from the middle, cuz we don’t want none of that in our dish!
Next, toss the squash pieces in a big bowl with a generous splash of olive oil, a couple of sprigs of thyme, and a good pinch of salt and pepper. Mix it all up until the squash is coated in the oil and seasonings.
Now it’s time to roast that bad boy. Spread the squash out in a single layer on a baking sheet and pop it in the oven. Roast it for about 40-45 minutes, or until it’s tender and caramelized on the outside. Trust me, the smell of this roasting squash is gonna have everyone in your house drooling!
While the squash is roasting, let’s make a quick and easy herb butter to go with it. Melt a stick of butter in a small saucepan over low heat. Once it’s melted, add in a handful of chopped fresh herbs – I like to use thyme and sage, but you can use whatever herbs you have on hand. Stir it all together and let it simmer for a minute or two until the herbs are fragrant.
Once the squash is done, take it out of the oven and let it cool for a minute. Now it’s time to assemble our dish. Start with a big ol’ scoop of the roasted squash in the center of a serving plate. Drizzle some of the herb butter on top, and sprinkle some more fresh herbs over everything. This dish is gonna look as good as it tastes!
