Butternut Squash and Eggplant Stir Fry
Ingredients:
- 1 medium butternut squash, peeled and chopped
- 1 medium eggplant, chopped
- 2 garlic cloves, minced
- 2 tbsp tamari or soy sauce
- 2 tbsp honey or maple syrup
- 2 tbsp sesame oil
- 1 tsp chili flakes (optional)
- 1 tbsp cornstarch
- 1/4 cup water
- 1/4 cup cashews, roughly chopped
- 2 green onions, sliced
- 2 tbsp sesame seeds
Instructions:
- Heat sesame oil in a large skillet or wok over medium-high heat. Add butternut squash and sauté for 5-7 minutes, until starting to soften.
- Add the eggplant and garlic to the skillet, and sauté for another 5 minutes.
- In a small bowl whisk together tamari or soy sauce, honey or maple syrup, chili flakes (if using), cornstarch and water.
- Pour the sauce into the skillet and stir until well combined. Cook until the sauce is thickened and vegetables are fully cooked through, about 5-7 minutes.
- Remove from heat and sprinkle chopped cashews, sliced green onions and sesame seeds on top. Serve with rice or noodles.

Ingredients:
- 1 medium butternut squash, peeled and chopped
- 1 medium eggplant, chopped
- 1 small onion, chopped
- 3 garlic cloves, minced
- 1 tbsp ginger, minced
- 1 tbsp curry powder
- 1 can coconut milk
- 1 tbsp olive oil
- 1 lime, juiced
- Salt and pepper to taste
Instructions:
- Heat olive oil in a large pot over medium-high heat. Add onion, garlic, and ginger, sauté for 2-3 minutes until fragrant.
- Add butternut squash and eggplant into pot and sauté for 5-7 minutes until slightly softened.
- Add curry powder to pot and stir until veggies are coated.
- Stir in coconut milk, salt, and pepper to taste.
- Bring mixture to a boil, then reduce heat and let simmer for 20-25 minutes, until vegetables are completely cooked.
- Remove from heat and stir in lime juice. Serve with rice or naan bread.
