Ingredients

- 2 cloves garlic, minced
- 1 tbsp olive oil

- 1 tsp ground cumin
- 1/4 tsp ground cinnamon
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic in olive oil over medium heat until soft and fragrant, about 5 minutes.
- Add the cubed butternut squash, vegetable broth, lime juice and zest, cumin, cinnamon, and cayenne pepper to the pot. Bring to a boil, then reduce heat and let simmer for 25-30 minutes, until the squash is tender.
- Use an immersion blender or transfer the soup to a blender and purée until smooth.
- Season with salt and pepper to taste.
