Roasted Butternut Squash
First up, we have an easy roasted butternut squash recipe, courtesy of Downshiftology. This dish is perfect as a healthy side or as a main dish when served with a protein.
Ingredients
- 1 butternut squash, peeled and diced
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
Instructions
- Preheat your oven to 400°F.
- Lightly coat the diced butternut squash in olive oil and season with salt, pepper, and garlic powder.
- Spread the squash out onto a baking sheet and roast for 25-30 minutes, or until the edges are golden brown and the inside is tender.
- Remove the squash from the oven and enjoy as a side dish or main course!
Sautéed Butternut Squash
Our next recipe is a classic sautéed butternut squash, courtesy of Mommy Hates Cooking. This dish is perfect to pair with a nice roast, and the brown sugar makes it extra sweet and savory.
Ingredients
- 1 butternut squash, peeled and diced
- 2 tablespoons butter
- 1 tablespoon brown sugar
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
Instructions
- Melt the butter in a large skillet over medium heat.
- Add the diced butternut squash to the skillet and sauté for 8-10 minutes, stirring occasionally.
- Once the squash is tender and lightly browned, sprinkle the brown sugar, salt, and cinnamon over the top and stir to coat evenly.
- Continue to sauté for another 2-3 minutes until the brown sugar has melted and created a glaze on the squash.
- Remove from heat and enjoy as a side dish or main course!
