Winter is quickly approaching, which means it’s time to start breaking out those hearty and comforting recipes. One of my favorites is this roasted butternut squash pasta with kale and walnuts. It’s vegan, filling, and bursting with flavor.
Ingredients:
- 1 medium butternut squash
- 1 onion, sliced
- 3 cloves garlic, minced
- 1/4 cup olive oil, divided
- 1 tsp. dried thyme
- 1 tsp. smoked paprika
- 1/2 tsp. salt
- 8 oz. pasta of your choice
- 4 cups kale, chopped
- 1/2 cup walnuts, chopped
Instructions:
- Preheat your oven to 375°F. Peel and seed the butternut squash, then cut it into small pieces. Toss with the sliced onion and minced garlic.
- In a small bowl, mix together 2 tablespoons of olive oil, thyme, smoked paprika, and salt. Pour this over the butternut squash, onion, and garlic, and toss well to coat.
- Spread the mixture on a baking sheet and roast for 30-40 minutes, or until the squash is tender and lightly browned.
- While the squash is roasting, cook the pasta according to package instructions. When it’s done, drain and set aside.
- When the squash is done, place it in a large mixing bowl with the chopped kale and remaining 2 tablespoons of olive oil. Toss well to combine.
- Add the cooked pasta to the bowl and toss everything together until well mixed.
- Top each serving with chopped walnuts and enjoy!
