Butternut Squash Soup
Start with:
- 4 cups of butternut squash, peeled and cubed
- 1 tablespoon of olive oil
- 1 large onion, chopped
- 2 cloves of garlic, minced
- 4 cups of vegetable broth
- 1/4 teaspoon of cinnamon
- 1/4 teaspoon of nutmeg
- Salt and pepper to taste
Preheat your oven to 375°F. Spread the butternut squash on a baking sheet, drizzle with olive oil and toss to coat. Roast in the oven for 35-45 minutes, until the squash is tender and lightly browned.
In a large pot, sauté the onion and garlic until softened and fragrant. Add the roasted butternut squash, vegetable broth, cinnamon, and nutmeg. Bring to a boil and then reduce the heat and let it simmer for 20 minutes.

- 1/2 teaspoon of dried sage
- 1/2 cup of heavy cream
- Salt and pepper to taste
In a large pot, melt the butter over medium heat and sauté the onion and garlic until softened and fragrant. Add the apples and butternut squash and cook for 5 minutes, stirring occasionally.
Add the vegetable broth, thyme, and sage and bring to a boil. Reduce the heat and let it simmer for 20-25 minutes, until the squash is tender.
Puree the soup in a blender or with an immersion blender until smooth. Stir in the heavy cream and season with salt and pepper to taste. Serve hot with a sprinkle of fresh herbs or Parmesan cheese.
