Grilled Butternut Squash with Shallot Vinaigrette
Ingredients:
- 1 large butternut squash
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- 2 tbsp honey
- 1 tsp dijon mustard
- 1 shallot, minced
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions:
- Preheat your grill to medium-high heat.
- Peel and slice the butternut squash into 1/2 inch rounds.
- Brush the slices with olive oil and sprinkle with salt and pepper.
- Grill the slices for 3-4 minutes on each side, until grill marks appear.
- Meanwhile, whisk together the apple cider vinegar, honey, dijon mustard, minced shallot, salt, and pepper to make the vinaigrette.
- Toss the grilled squash slices with the vinaigrette.
- Serve warm or at room temperature.
Grilled Butternut Squash with Browned Butter and Sage
Ingredients:
- 1 large butternut squash
- 3 tbsp butter
- 6-8 fresh sage leaves
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions:
- Preheat your grill to medium-high heat.
- Peel and slice the butternut squash into 1/2 inch rounds.
- Melt the butter in a small saucepan over medium heat. Cook, stirring constantly, until the butter turns a light brown color and starts to smell nutty.
- Tear the sage leaves into small pieces and add them to the browned butter. Remove from heat and set aside.
- Brush the slices of squash with the sage butter and sprinkle with salt and pepper.
- Grill the slices for 3-4 minutes on each side, until grill marks appear.
- Serve hot.
