Ingredients:
– 1/2 large head of cabbage, thinly sliced
– 1 red bell pepper, thinly sliced
– 1/2 red onion, thinly sliced
– 1 cup shredded carrots
– 1/2 cup chopped fresh cilantro
– 1/2 cup slivered almonds
Dressing:
– 1/4 cup rice vinegar
– 3 tbsp honey
– 1 tbsp soy sauce
– 1 tsp sesame oil
– 1 clove garlic, minced
– 1/4 cup vegetable oil
To make the dressing, whisk together all ingredients except for the vegetable oil. Slowly stream in the vegetable oil while continuing to whisk until the dressing is emulsified.
Instructions:
1. In a large bowl, combine the cabbage, bell pepper, onion, carrots, and cilantro.
2. Toss the salad with the dressing until everything is well-coated.
3. Cover and chill the salad in the fridge for at least 30 minutes before serving.
4. When you’re ready to serve, sprinkle the slivered almonds over the top of the salad for some added crunch.
