Here’s a delicious and healthy recipe that I recently found – a Slow Cooker Cabbage Roll Soup that’s perfect for those chilly days. It’s filling, nutritious and easy to make, plus it’s Whole30 and Paleo approved. Don’t worry, even if you’re not following these diets, this soup is still amazing!
Slow Cooker Cabbage Roll Soup
Ingredients
- 1 lb ground beef
- 1 tsp sea salt
- 1 tsp garlic powder
- 1 large onion, chopped
- 4-5 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 can (28 oz) of crushed tomatoes
- 1 can (14 oz) of diced tomatoes with juice
- 4 cups of beef broth, preferably homemade
- 1 head of cabbage, cored and chopped
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 bay leaf
- Optional: red pepper flakes for heat
Instructions
- In a large skillet brown the ground beef, sea salt and garlic powder together until beef is no longer pink.
- Drain the fat from the skillet and set aside.
- In a slow cooker, add chopped onion, minced garlic, chopped green pepper, crushed tomatoes, diced tomatoes with juice, beef broth, chopped cabbage, smoked paprika, dried thyme, dried oregano, bay leaf and optional red pepper flakes if using.
- Add the beef mixture to the slow cooker and stir.
- Place the lid on top and cook on low heat for 6-8 hours.
- Remove the bay leaf before serving.
Another great cabbage soup recipe that caught my eye is this one, which has a slightly different flavor profile.
Cabbage Soup Recipe
Ingredients
- 1 lb ground turkey
- 1 onion, chopped
- 2-3 cloves garlic, minced
- 2 green bell peppers, chopped
- 2 cans (14.5 oz each) of diced tomatoes with juice
- 6 cups of chicken broth, preferably homemade
- 1 head of cabbage, cored and chopped
- 1 tsp oregano
- 1 tsp basil
- Optional: salt and pepper to taste
Instructions
- In a large pot, brown the ground turkey, onion and garlic together until turkey is no longer pink.
- Add chopped green peppers to the pot and sauté for a few minutes.
- Add diced tomatoes, chicken broth, chopped cabbage, oregano, basil, salt and pepper.
- Bring the soup to a boil, then reduce the heat and simmer for 30-40 minutes or until the cabbage is tender.
- Season with additional salt and pepper if needed before serving.
