Carbonara with a Twist

Ingredients
- 1 lb beef, sliced into thin strips
- 1 1/2 cups heavy cream
- 3 egg yolks
- 1/2 cup grated Parmesan cheese
- 1/4 cup grated cheddar cheese
- 1/2 cup chopped onion
- 1/2 cup chopped garlic
- 1/4 cup olive oil
- 1/2 tsp black pepper
- 1 lb spaghetti pasta
- 6 cups water
- 1 tbsp salt
Instructions
- In a large pot, bring the water to a boil. Add the salt and spaghetti pasta. Cook the pasta until it is tender, but not overcooked. Drain and set aside.
- Add the olive oil to a pan over medium heat. Add the onions and garlic and sauté until they are soft.
- Add the beef strips and cook until brown.
- In a separate bowl, mix the heavy cream, egg yolks, and black pepper until well combined.
- Add the spaghetti pasta to the pan containing the beef strips and mix well.
- Add the Parmesan and cheddar cheese to the pan and mix well.
- Turn off the heat and add the heavy cream mixture to the pan. Mix well.
- Plate and serve while hot.
