• 500g spaghetti
• 6 rashers of smoked streaky bacon, chopped
• 4 large eggs
• 100g grated parmesan cheese
• 150ml double cream
• 1 clove garlic, finely chopped
• 2 tbsp olive oil
• salt and freshly ground black pepper

Instructions:

1. Cook the spaghetti in a large pan of boiling salted water according to the packet instructions
2. Meanwhile, fry the bacon in a non-stick frying pan over a medium heat until crispy, then remove with a slotted spoon and set aside on kitchen paper to drain
3. In a bowl, whisk together the eggs, parmesan, cream and garlic, and season with salt and freshly ground black pepper
4. Drain the spaghetti, reserving about a cupful of the cooking water, and return it to the pan
5. Add the olive oil and the bacon to the pan and toss with the spaghetti over a low heat for 30 seconds to combine
6. Remove the pan from the heat and pour in the egg mixture, mixing quickly and thoroughly until the eggs thicken to a creamy sauce. If the mixture is too thick, add a tablespoon or two of the reserved cooking water to loosen it up
7. Divide the spaghetti carbonara between four plates and serve immediately, topped with a little extra grated parmesan and some freshly ground black pepper

Bacon-y Spaghetti Carbonara

Ingredients:

• 1 pound spaghetti
• 1/2 pound bacon, chopped
• 1/4 cup olive oil
• 4 large eggs, at room temperature
• 1 cup freshly grated Parmesan cheese
• 1/2 cup heavy cream
• 3 cloves garlic, finely chopped
• Kosher salt and freshly ground black pepper

Instructions:

1. Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, according to the package directions. Reserve 1 cup of the pasta cooking water, then drain the spaghetti and return it to the pot.
2. Meanwhile, in a large skillet, cook the bacon over medium heat until crispy, about 8 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate to drain.
3. In a medium bowl, whisk together the eggs, Parmesan, cream, garlic, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
4. Add the olive oil and bacon to the pot with the spaghetti and toss to combine.
5. Increase the heat to medium-high and pour the egg mixture over the spaghetti, tossing quickly to coat. (Make sure the pot is off the heat at this point to prevent the eggs from scrambling.)
6. Add reserved pasta water, a tablespoon at a time, as needed to create a smooth sauce. Serve immediately, garnished with additional Parmesan cheese and black pepper.
