Valentine’s Day is quickly approaching, and it’s time to start thinking about what to cook for that special someone. Lucky for us, Donal Skehan has shared his Valentine’s Menu on the Lakeland Blog, complete with a delicious starter, main course, and dessert.

First up is the starter, a delicious Beetroot and Goats’ Cheese Salad. To make this dish, you’ll need roasted beetroots, goats’ cheese, rocket leaves, and a balsamic glaze. Start by roasting the beetroots in the oven until soft. Once cooled, slice the beetroots and arrange them on a plate with rocket leaves and crumbled goats’ cheese. Drizzle with balsamic glaze and you’re ready to serve!

Next up is the main course, Seared Scallops with Cauliflower Puree and Crispy Bacon. To make this dish, you’ll need scallops, cauliflower, cream, butter, bacon, and chives. Start by frying the bacon until crispy and setting aside. In the same pan, sear the scallops until golden brown on each side. For the cauliflower puree, cook the cauliflower in a pot of boiling water until soft. Drain and blend with cream and butter until smooth. Season with salt and pepper to taste. Plate the scallops on top of the cauliflower puree and top with crispy bacon and chives.

Finally, it’s time for dessert – Salted Caramel and Chocolate Tart. To make this decadent dessert, you’ll need digestive biscuits, butter, dark chocolate, double cream, golden syrup, and sea salt. Start by crushing the biscuits in a ziplock bag until fine. Melt the butter and mix with the crushed biscuits. Press the mixture into the bottom of a tart tin and refrigerate for 30 minutes. In a pan, melt the dark chocolate with double cream, golden syrup, and a pinch of sea salt. Pour the mixture over the biscuit base and refrigerate for another 2 hours until set.
