Dulce de Leche Cheesecake Recipe
Ingredients
- 1 cup graham cracker crumbs
- 2 tablespoons granulated sugar
- 3 tablespoons unsalted butter, melted
- 1 pound cream cheese
- 3/4 cup granulated sugar
- 3 large eggs
- 1/2 teaspoon vanilla extract
- 1/2 cup dulce de leche
Instructions
- Preheat your oven to 350°F.
- In a small bowl, mix the graham cracker crumbs, sugar, and melted butter until combined. Press the mixture onto the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.
- In a large bowl, mix the cream cheese and sugar until smooth. Beat in the eggs, one at a time, until everything is smooth. Add the vanilla extract and dulce de leche and stir.
- Wrap the springform pan with aluminum foil and place it into a roasting pan. Pour the cheesecake mixture into the springform pan. Fill the roasting pan with enough hot water to go halfway up the sides of the springform pan.
- Bake for 1 hour and 10 minutes, or until the center is set but still jiggly.
- Let cool to room temperature, then cover with plastic wrap and refrigerate for at least 4 hours, or overnight.
- Remove the foil from the outside of the springform pan. Slice and serve chilled.
