Easter is coming and it’s time to add some excitement to your dessert table! What better way to do that than with some delicious cheesecakes, topped with festive Easter nest decorations?
Individual Easter Nest Cheesecakes
First up, we have these adorable Individual Easter Nest Cheesecakes! These cheesecakes are perfect for those who want a bite-sized dessert that’s easy to serve and even easier to eat. Plus, with the addition of the Easter nest on top, they’re sure to impress your guests!
Ingredients:
- 200g Digestive biscuits
- 100g Unsalted butter
- 600g Full-fat cream cheese
- 150g Caster sugar
- 1 tsp Vanilla extract
- 3 Large eggs
- 200g Milk chocolate
- Mini chocolate eggs and speckled chocolate mini eggs to decorate
Instructions:
- Preheat the oven to 160C Fan.
- Put the digestives into a food processor and pulse until fine crumbs. Alternatively, put them in a bag and crush with a rolling pin.
- Melt the butter and pour into the crumbs, and mix until a rough dough is formed.
- Press the dough into the base of 12 7-8cm ring moulds or tart tins, and press down until firm and level across.
- In a stand mixer, beat together the cream cheese, caster sugar, and vanilla until smooth.
- Add the eggs in one at a time, mixing well between each addition. Pour the mixture into the moulds gently, enough to fill 3/4 way up the moulds or tins.
- Bake in the oven for 14-16 minutes until there is a slight Wibble in the middle of the cheesecakes when shaken (it will firm up as it cools).
- Once baked, leave the cheesecakes to cool fully in the moulds or tins.
- Melt the milk chocolate in a bowl over a saucepan of gently simmering water.
- Carefully remove the cheesecakes from their moulds or tins, and drizzle or spread the melted chocolate over the top of them.
- Decorate with mini chocolate eggs and speckled chocolate mini eggs around the edge of the cheesecakes.
- Chill in the fridge until ready to serve.
Strawberry Shortcake Cheesecake
If you’re a fan of strawberry shortcake, then you’ll love this Strawberry Shortcake Cheesecake recipe! It combines the best of both worlds, with a creamy cheesecake filling sandwiched between layers of fluffy shortcake. It’s the perfect dessert for any Easter gathering!
Ingredients:
- 2 cups heavy cream
- 2/3 cup granulated sugar
- 2 teaspoons vanilla extract
- 8 oz cream cheese, room temperature
- 2 cups strawberries, hulled and sliced
- 3 cups all-purpose flour
- 1/4 cup granulated sugar plus 2 tablespoons
- 1 teaspoon salt
- 2 tablespoons baking powder
- 10 tablespoons unsalted butter, cold and cubed
- 1 1/3 cups whole milk
- Egg wash (1 egg + 1 tablespoon water, whisked together)
Instructions:
- Preheat oven to 400°F (200°C) and line an 8″ round cake pan with parchment paper. Set aside.
- In a medium bowl, whisk together flour, sugar, salt, and baking powder.
- Add in cold butter, and using a pastry blender or your fingers, mix butter into the flour mixture until it resembles coarse sand.
- In a separate bowl, whisk together milk and the egg wash, then add to the flour mixture and stir until just combined.
- Turn the dough out onto a lightly floured surface and knead until it comes together into a ball.
- Roll dough out into a large circle (about 1/2″-3/4″ thick), and transfer the circle to the prepared cake pan.
- Brush the top of the dough with egg wash, then sprinkle with 2 tablespoons of sugar.
- Bake for 20-25 minutes, or until the top is golden and the shortcake is cooked through. Remove from oven and set aside to cool.
- In a large mixing bowl, using an electric mixer, beat cream cheese until smooth.
- Add in sugar and vanilla extract, and beat until combined.
- In a separate bowl, beat heavy cream until stiff peaks form. Carefully fold whipped cream into cream cheese mixture.
- Spoon half of the mixture over the shortcake, spreading it out evenly. Add a layer of sliced strawberries over the top of the cheesecake mixture.
- Add the second half of the cheesecake mixture over the strawberries and spread it out evenly.
- Add another layer of sliced strawberries over the top of the cheesecake, forming a smooth layer.
- Refrigerate for at least 4 hours or overnight before diving in!
