Classic Cheesecake
Indulge in a creamy classic cheesecake that’s worth the splurge without feeling guilty or compromising your blood sugar levels.
Ingredients:
- 3/4 cup graham cracker crumbs
- 1 tablespoon margarine, melted
- 2 (8 ounces) packages cream cheese, softened, regular or light
- 1 cup fat-free cottage cheese
- 1/2 cup egg substitute
- 1/2 cup granulated sugar substitute
- 2 teaspoons vanilla extract
Instructions:
- Beat cream cheese and cottage cheese in a large bowl with an electric mixer until smooth. Add egg substitute, sugar substitute, and vanilla extract; beat well.
- Pour mixture over crust and smooth top with a spatula.
- Bake at 375 degrees for 35 to 40 minutes or until cheesecake has set.
- Remove from oven and let cool completely.
- Refrigerate overnight or for at least 4 hours before serving.
Diabetic Cheesecake
This delightful diabetic-friendly cheesecake is perfect for a special occasion or a sweet treat for yourself or your loved ones.
Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/2 cup granulated sugar substitute
- 1/3 cup unsalted butter, melted
- 2 (8 ounces) packages cream cheese, softened
- 1/2 cup egg substitute
- 1/4 cup all-purpose flour
- 1 teaspoon vanilla extract
- 10 ounces frozen unsweetened strawberries
Instructions:
- Preheat oven to 375 degrees F.
- In a medium bowl, combine graham cracker crumbs, sugar substitute, and unsalted butter, and mix well.
- Press crumb mixture into the bottom of a 9-inch springform pan.
- Bake crust for 8 minutes.
- Remove crust from oven and allow to cool while working on the filling.
- In a large bowl, beat the cream cheese until it’s soft and creamy, then beat in egg substitute.
- Add all-purpose flour and vanilla extract, and beat until smooth.
- Pour the mixture over the crust and bake for 30 to 35 minutes in a 375-degree oven until slightly brown on top and firm to the touch.
- Cool the cheesecake in the pan before removing the sides of the pan.
- In a blender or food processor, blend the strawberries until smooth and creamy.
- Serve sliced cheesecake with a dollop of strawberry sauce on top.
