Get Some Rolo Action
First things first, we’re gonna need some Rolo candies up in here. Don’t be shy, get yourself a pack of those bad boys and let’s get to work.
Ingredients:
- 200g Digestive Biscuits (or Graham Crackers)
- 1 Tbsp Granulated Sugar
- 100g Unsalted Butter, melted
- 250ml Double Cream (Heavy Cream)
- 100g Caster Sugar
- 400g Cream Cheese
- 200g Rolo Candies (chopped)
- Caramel Sauce
Instructions:
- Crush the digestive biscuits/graham crackers and mix with the granulated sugar. Pour in the melted butter and mix well.
- Press the mixture into the bottom of a 20cm/8-inch springform cake tin and refrigerate for at least 30 minutes.
- In a large mixing bowl, whisk the double cream and caster sugar until stiff peaks form. In a separate bowl, beat the cream cheese until smooth.
- Add the whipped cream to the cream cheese and mix well. Fold in the chopped Rolo candies.
- Pour the mixture onto the biscuit/graham cracker base and smooth with a spatula. Refrigerate for at least 3 hours, or overnight if possible.
- Before serving, drizzle caramel sauce over the cheesecake and top with additional Rolo candies, if desired.
