Homemade Chicken Alfredo
Ingredients
- 1 pound fettuccine pasta
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 cup (1 stick) unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup freshly grated parmesan cheese
- 1 lemon, juiced and zested
- Salt and black pepper, to taste
Now, before we get started, there are a couple of tips I’d like to share. First, be sure to salt your pasta water generously as it boils. This will add flavor to the pasta itself, rather than just relying on the sauce to carry the dish. Second, don’t be afraid to adjust the sauce to your liking. If you want it thicker, let it simmer a bit longer. If you want it thinner, add a splash of milk or cream. And last but not least, be sure to taste as you go to make sure the seasonings are just right.
Instructions
- Bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente, according to package instructions. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the chicken and season with salt and pepper. Cook for 5-7 minutes, until cooked through and browned on all sides. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and cook for just a minute or two, until fragrant.
- Pour in the heavy cream and stir to combine. Bring to a simmer and cook for 5-7 minutes, until slightly thickened.
- Add the parmesan cheese and stir gently until it is fully melted and combined.
- Stir in the lemon juice and zest, and season with salt and pepper to taste.
- Add the cooked fettuccine and chicken to the skillet and toss everything together until fully coated in the sauce.
- Serve hot, garnished with extra parmesan cheese and some freshly chopped parsley if desired.
Lemony, Garlicky, Cheesy Goodness
If you want to mix things up a bit, try adding in some sautéed veggies, like broccoli or bell peppers, for an extra hit of color and nutrients. Or swap out the chicken for some shrimp or even crab meat for a seafood twist.
