Let me tell you about this amazing dish that I cooked yesterday – one pot chicken pasta! It was so easy to make and tasted absolutely delicious. I found the recipe online and decided to give it a try, and I’m so glad I did.
One Pot Chicken Pasta Recipe
Ingredients
- 1 pound chicken breast, thinly sliced
- 8 oz. linguine pasta
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1/2 cup parmesan cheese, grated
- 2 tbsp. olive oil
- Salt and pepper to taste
- 2 tbsp. fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium-high heat, and add chicken. Cook until browned on both sides (about 2-3 minutes per side) and remove from the pan.
- Add chopped onion and garlic to the same skillet and cook for 2-3 minutes until softened.
- Return chicken to the skillet and add uncooked pasta, chicken broth, heavy cream, salt and pepper.
- Bring to a boil, then reduce heat to medium-low and cover the skillet.
- Cook until pasta is tender and most of the liquid has been absorbed (about 15-18 minutes).
- Remove from heat and stir in parmesan cheese and fresh parsley.
Low Fat Mushroom Pasta Recipe
This low-fat mushroom pasta is a great option for people who want to eat healthy while still enjoying delicious food.
Ingredients
- 8 oz. whole wheat pasta
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 8 oz. mushrooms, sliced
- 2 cups vegetable broth
- 1/2 cup milk
- 2 tbsp. flour
- 2 tbsp. olive oil
- Salt and pepper to taste
- 2 tbsp. fresh parsley, chopped
Instructions
- Cook pasta according to package instructions, and drain.
- Heat olive oil in a large skillet over medium-high heat, and add onion and garlic. Cook until softened, about 2-3 minutes.
- Add sliced mushrooms to the skillet and cook until browned and tender, about 5-7 minutes.
- Stir in flour and cook for 1 minute, stirring constantly.
- Gradually stir in vegetable broth and milk, whisking until smooth.
- Bring to a boil, then reduce heat to low and simmer for 5-7 minutes, until sauce has thickened.
- Season with salt and pepper to taste, and serve over cooked pasta.
