Creamy Garlic Chicken Pasta
Ingredients
- 1 pound spaghetti pasta
- 1 tablespoon olive oil
- 1 pound boneless chicken breasts, cut into strips
- 1 onion, chopped
- 4 garlic cloves, minced
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 3 cups fresh spinach leaves
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until golden brown, stirring occasionally. Remove the chicken from the skillet and set aside.
- Add the onion to the skillet and sauté until soft, about 5 minutes. Add the garlic and cook for 1-2 minutes more, stirring constantly.
- Pour in the chicken broth and scrape the bottom of the skillet with a wooden spoon to release any brown bits. Add the sun-dried tomatoes and spinach and cook until the spinach has wilted, about 2-3 minutes.
