- 3 pounds beef chuck, cut into small cubes

- Add the diced tomatoes, beef broth, and coffee to the pot and bring to a simmer.
- Cover the pot and simmer for 2 hours, stirring occasionally.
- After 2 hours, add the kidney beans to the pot and simmer for an additional 30 minutes.
- Stir in the cilantro and season with salt and pepper, to taste.
