Beer-Braised Chili
Ingredients:
- 2 tbsp. olive oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 4 garlic cloves, chopped
- 1 tbsp. chili powder
- 1 tsp. ground cumin
- 1 tsp. paprika
- 1 can kidney beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes, undrained
- 1 bottle beer
- 1 lb. ground beef
- Salt and pepper, to taste
Instructions:
- Heat the oil in a large pot over medium heat. Add the onion, bell pepper, and garlic, and cook until they begin to soften, about 5 minutes.
- Add the chili powder, cumin, and paprika, and cook for 1 minute, stirring constantly.
- Add the beans, tomatoes, and beer, and bring to a simmer.
- In a separate pan, cook the ground beef until browned and cooked through. Drain off any excess fat.
- Add the beef to the chili, and let simmer for another 30 minutes to meld the flavors together.
- Season with salt and pepper to taste, and serve with your favorite toppings.
Slow-Cooked Chunky Chili
Ingredients:
- 2 lbs. ground beef
- 2 cans diced tomatoes
- 2 cans kidney beans, rinsed and drained
- 2 cans black beans, rinsed and drained
- 2 onions, chopped
- 2 bell peppers, chopped
- 6 cloves garlic, minced
- 2 tbsp. chili powder
- 1 tsp. cumin
- 1 tsp. salt
- 1/2 tsp. black pepper
Instructions:
- In a large skillet, cook the ground beef until browned. Drain off any excess fat.
- Add the beef to a slow cooker, along with the tomatoes, kidney beans, black beans, onions, bell peppers, garlic, chili powder, cumin, salt, and pepper.
- Cook on low for 6-8 hours, or until the vegetables are tender and the flavors have melded together.
- Adjust the seasoning to taste, and serve with your favorite toppings.
