There’s just something so satisfying about a rich and creamy soup filled with tender chunks of clams, potatoes, and other delicious ingredients. And the best part is, you don’t have to be a master chef to whip up a batch of this tasty soup! With the help of this quick and easy recipe, you can have delicious clam chowder on your table in no time.
To start off, you’ll need the following ingredients:
– 4 slices bacon, chopped
– 1 onion, chopped
– 2 cloves garlic, minced
– 2 tbsp. all-purpose flour
– 2 cups chicken broth
– 1 cup milk
– 1 bay leaf
– 1 lb. potatoes, diced
– 2 cans chopped clams, drained
– Salt and pepper to taste
– Chopped fresh parsley or chives for garnish
To make the clam chowder, begin by cooking the chopped bacon in a large pot over medium heat until crispy. Remove the bacon and set it aside, but leave the bacon fat in the pot.
Add the chopped onion and minced garlic to the pot with the bacon fat and cook until soft and translucent, about 5 minutes. Sprinkle the flour over the onion and garlic and stir to coat everything evenly.
Gradually stir in the chicken broth and milk, stirring constantly to prevent lumps. Add the bay leaf and diced potatoes and bring the soup to a simmer. Simmer for about 15 minutes, or until the potatoes are tender.
Finally, stir in the drained clams and cooked bacon, and season the soup with salt and pepper to taste. Garnish the soup with chopped parsley or chives before serving.
