If there’s anything that I simply cannot resist on a cold and blustery day, it is a bowl of piping-hot clam chowder! This creamy and savory soup has always been one of my favorites to try out, and I’m always on the lookout for the best recipes out there. So, today I decided to try my hand at making two award-winning clam chowder recipes that I came across on the Internet, and boy did they not disappoint!
First up, we have “Duke’s Award Winning Clam Chowder”. This recipe uses heavy whipping cream, bacon, and a plethora of veggies to give the chowder its rich and creamy texture. To start, you will need to gather ingredients such as chopped onions and celery, minced garlic, butter, flour, and bottles of clam juice and chicken broth.
Once those are ready, start by sautéing the celery, onions, garlic, and bacon in a pot until they become tender. Then add flour and butter while stirring until they become a thick paste. Once that is done, start adding in your liquids, all while whisking until everything is evenly mixed. Lastly, add in the clams and continue to cook for another 10 minutes.
Now onto recipe number two, “Stew’s Award Winning New England Clam Chowder”. This chowder is a bit different- it uses half-and-half instead of heavy cream to keep things a bit lighter. The ingredients are similar, but this recipe takes a bit longer (around an hour) to prepare.
Start by frying bacon in a pot until crispy, then remove and set aside. Using the bacon fat, sauté onions and celery until tender. Add in minced garlic and flour, then deglaze the pan with clam juice, chicken broth, and cubed potatoes. Once the potatoes have become tender, add in canned clams and half-and-half. Bring everything to a simmer, stirring occasionally until the chowder reaches your desired consistency.
Once both chowders are ready, serve them in bowls with crusty bread and garnish with bacon bits and fresh parsley. Trust me, nothing beats a nice bowl of hot clam chowder on a cold day!
