New England Clam Chowder Recipe

Ingredients:
- 4 cans (6.5 ounces each) minced or chopped clams
- 4 slices thick-cut bacon, chopped
- 1 tablespoon unsalted butter
- 1 large onion, chopped
- 2 celery stalks, chopped
- 4 cups diced potatoes (Russet or Yukon Gold work well)
- 2 cups chicken broth
- 1 bay leaf
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 can (12 ounces) evaporated milk
- 2 tablespoons chopped fresh parsley
Instructions:
- Drain clams, reserving liquid from 2 cans. Set aside.
- In a large pot, cook bacon over medium-high heat until crisp. Using a slotted spoon, transfer bacon to a paper towel-lined plate, reserving drippings in pot.
- Add butter to drippings in pot. Add onion and celery; cook and stir until tender.
- Add potatoes, chicken broth, bay leaf, thyme, salt, and pepper. Bring to a boil. Reduce heat; simmer, covered, until potatoes are tender, 10-15 minutes.
- Add clam juice, evaporated milk, and clams. Cook until heated through. Do not boil.
- Discard bay leaf. Sprinkle with parsley and bacon.
