THAI-STYLE CLAM CHOWDER WITH RICE AND COCONUT MILK

It’s got all the classic clam chowder flavors (creamy, briny, with a hint of bacon), but with a unique Thai twist that will have you slurping up every last drop. - 1 lb Manila Clams, scrubbed and rinsed in sea water
- 1 1/2 cups of basmati rice, rinsed

- A handful of cilantro leaves
- Salt and black pepper, to taste
Instructions:
- Cut the bacon into small pieces, and cook in a large pot over medium heat until crispy. Remove with a slotted spoon and set aside.
- In the same pot, add the garlic and saute until fragrant. Add the clams, and cook for a few minutes until they begin to open (discard any that don’t).
- Remove the clams with a slotted spoon and set aside. Pour the coconut milk into the pot, and stir in the rice and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and let simmer for about 20 minutes, or until the rice is tender and the liquid has been absorbed.
- Stir in the bacon, clams, and Siracha (if using), and let cook for a few more minutes until heated through. Season with salt and pepper as needed.
- Garnish with cilantro leaves and serve hot. Enjoy!
COCO CLAM CHOWDER RECIPE WITH LEMONGRASS (ASIAN STYLE)

- 2 cups chicken stock (or water)
- 1 cup coconut milk

- 1 tablespoon fish sauce
- 1/2 teaspoon sugar
- 1/4 teaspoon white pepper powder
- 1 Kaffir lime leaf (optional)
- Cilantro leaves, chopped
- Lime wedges
Instructions:
- Place the clams in a pot with 1 cup of water and cook over high heat for about 10 minutes, or until they open up. Remove the clams with a slotted spoon, and discard any that don’t open. Strain the broth through a mesh sieve, and set aside.
- In the same pot, saute the lemongrass, shallots, garlic, and chili (if using) until fragrant. Add the chicken stock (or water), coconut milk, corn, fish sauce, sugar, white pepper powder, and Kaffir lime leaf (if using). Bring to a boil, then reduce heat and let simmer for about 10 minutes.
- Add the clams and the reserved broth to the pot, and let cook for a few more minutes until heated through. Season with salt and pepper as needed.
- Garnish with cilantro leaves, and serve hot with lime wedges. Bon appetit!
