Easy Clam Chowder Recipe

- 4 slices bacon, chopped
- 1 large onion, chopped
- 2 garlic cloves, minced
- 3 cups chicken broth
- 1 can (10 ounces) chopped clams, drained
- 2 cups cubed peeled potatoes
- 1 cup heavy whipping cream
- 1/2 teaspoon minced fresh thyme or 1/8 teaspoon dried thyme
- 1/8 teaspoon pepper
- Chopped fresh parsley and additional crumbled cooked bacon, optional

- In a large saucepan, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 2 tablespoons drippings.
- In the same pan, saute onion in drippings until tender. Add garlic; cook 1 minute longer. Stir in broth, clams, potatoes, cream, thyme and pepper. Bring to a boil. Reduce heat; simmer, covered, until potatoes are tender, 15-20 minutes. Sprinkle with parsley and additional bacon if desired.
