The Best Clam Chowder

- 1/2 pound salt pork, chopped into small cubes
- 2 onions, chopped
- 4 cups peeled and cubed potatoes
- 1 quart clam juice
- 1 bay leaf
- 1/4 teaspoon dried thyme
- 1 teaspoon black pepper
- 1/2 cup all-purpose flour
- 2 cups heavy cream
- 4 cans minced clams, drained
- Salt to taste
Directions:
- In a large pot, cook salt pork over medium heat until browned. Remove the salt pork and set aside.
- Add the onions to the pot and sauté until translucent.
- Add the potatoes, clam juice, bay leaf, thyme and black pepper to the pot and bring to a boil. Reduce the heat and simmer for 15 minutes.
- In a separate dish, mix the flour and cream together until well combined. Add this mixture to the pot with the potatoes and stir constantly as you bring the soup back to a simmer.
- Add the minced clams and salt to taste. Simmer until potatoes are cooked.

- Salt and pepper to taste
Directions:
- Cook the chopped bacon in a pot until crisp. Remove the bacon and set aside.
- Add the onion to the pot and sauté until softened.
- Add the can of clams (with juice), half and half, milk, potato, thyme, garlic powder, salt, and pepper to the pot and bring to a boil.
- Reduce heat and simmer until potato is cooked through.
- Top with the reserved bacon bits and serve!
