Creamy Homemade Clam Chowder
Ingredients:
- 6 slices of bacon, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 3 large potatoes, peeled and cubed
- 4 cups of chicken broth
- 2 cans of clams, drained and chopped
- 1 cup of heavy cream
- salt and pepper to taste
- fresh parsley for garnish
Directions:
- In a large pot, fry the bacon until crisp. Remove with a slotted spoon and set aside.
- In the bacon fat, sauté the onion and garlic until translucent.
- Add the potatoes and chicken broth. Bring to a boil and then reduce heat and simmer for 15-20 minutes until the potatoes are tender.

- 1 onion, chopped
- 4 stalks of celery, chopped
- 3 cloves of garlic, minced
- 1/2 cup of all-purpose flour
- 3 cups of chicken broth
- 2 cans of clams, drained
- 1 1/2 cups of half-and-half cream
- salt and pepper to taste
Directions:
- In a large pot, melt the butter and sauté the onion, celery, and garlic until tender.
- Gradually whisk the flour into the vegetable mixture until well combined.
- Gradually add the chicken broth, whisking constantly, until well combined and smooth.
- Bring to a boil and then reduce heat and simmer for 10-15 minutes until slightly thickened.
- Add the clams and half-and-half cream and simmer for an additional 5-10 minutes until heated through.
- Season with salt and pepper to taste.
- Serve hot, with a side of oyster crackers or crusty bread.
