Clam Chowder Soup Definition

Okay folks, gather around because I’ve got a recipe that’s going to blow your taste buds away. We’re talking about clam chowder soup! And before you go ahead and say “that’s boring”, stick with me here because I promise you this recipe is anything but boring.

Let’s Start with the Basics

First things first, you’re going to need some good quality clams. Don’t cheap out on this one folks, we want the good stuff. Now, I know what you’re thinking – “but clams are so hard to clean!” Fear not, my fellow foodies, I’ve got a trick up my sleeve. Soak those bad boys in some salt water and cornmeal for a few hours and watch the magic happen. Trust me, it’s foolproof.

Ingredients

• 2 lbs clams, cleaned and scrubbed
• 4 slices bacon, diced
• 1 onion, chopped
• 2 celery stalks, chopped
• 2 garlic cloves, minced
• 3 cups chicken broth
• 2 cups heavy cream
• 3 potatoes, peeled and diced
• 2 bay leaves
• 1 tsp fresh thyme, chopped
• 1 tbsp butter
• 1 tbsp flour
• Salt and pepper, to taste

Let’s Get Cooking

Now that we’ve got our ingredients prepped and ready to go, it’s time to get cooking. First, we’re going to cook up that bacon until it’s nice and crispy. Remove the bacon from the pan and set aside, leaving the bacon grease in the pan.

Add the onion, celery, and garlic to the pan and cook until the onions are translucent. This should take about 5 minutes. Add the chicken broth, heavy cream, potatoes, bay leaves, thyme, salt, and pepper to the pan and bring to a boil. Reduce heat to low and let simmer until the potatoes are tender, this should take about 15-20 minutes.

In a separate pan, melt the butter over medium heat. Whisk in the flour to create a roux. Slowly add about 1 cup of the chowder liquid to the roux, whisking constantly to prevent lumps. Once fully incorporated, slowly pour the roux mixture back into the chowder pot, whisking constantly. Add the clams and let simmer for an additional 5-10 minutes to allow the flavors to meld together.
