Hey y’all! Today I’m bringing you a recipe for some bomb-ass clam chowder. This Southern-style soup is sure to warm you up on a cold winter day. Now let’s get to cooking!
Whole30 Clam Chowder
Ingredients:
- 4 slices of bacon, diced
- 1 large onion, diced
- 2 garlic cloves, minced
- 3 celery stalks, diced
- 3 carrots, peeled and diced
- 2 teaspoons of fresh thyme
- 3 cups of chicken broth
- 1 cup of coconut milk
- 2 cans of clams, drained and chopped
- Salt and pepper to taste
Instructions:
- In a large pot, cook the bacon over medium heat until it’s crispy.
- Add the onion and garlic and cook until the onion is translucent.
- Add the celery, carrots, and thyme and cook for another 5 minutes.
- Add the chicken broth and coconut milk and bring to a simmer.
- Add the chopped clams and simmer for another 5 minutes.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Clam Chowder from Pasta Moon Restaurant
Ingredients:
- 4 strips of bacon, chopped
- 2 cups of onion, chopped
- 2 cups of celery, chopped
- 2 cloves of garlic, minced
- 1/2 teaspoon of dried thyme
- 1 teaspoon of Old Bay seasoning
- 1 cup of chicken broth
- 1 pound of cooked clams, chopped
- 2 cups of heavy cream
- Salt and pepper to taste
Instructions:
- In a large pot, cook the bacon until crispy.
- Add the onions, celery, and garlic and cook until the onions are translucent.
- Add the thyme, Old Bay seasoning, and chicken broth and bring to a boil.
- Add the chopped clams and simmer for 5 minutes.
- Stir in the heavy cream and heat until just simmering.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
