Cottage Pie is the quintessential British comfort food that has been enjoyed for generations. First, preheat your oven to 200°C. Next, gather the ingredients:
For the pie filling:
– 1 onion, chopped
– 2 carrots, chopped
– 1 tbsp olive oil
– 500g minced beef
– tablespoon tomato puree
– 400g tin chopped tomatoes
– 1 beef stock cube, crumbled
– 2 tbsp Worcestershire sauce
– Salt and freshly ground black pepper
For the topping:
– 1kg potatoes, peeled and chopped
– 50g butter
– 50ml milk
– 2 leeks, washed and sliced
– 100g grated cheddar cheese
Start by heating the olive oil in a large frying pan and add the chopped onion and carrots. Cook until the vegetables are softened. Add the minced beef and cook until browned all over. Stir in the tomato puree, chopped tomatoes, beef stock, Worcestershire sauce, salt and pepper. Cover with a lid and simmer for 30 minutes.
While the filling is simmering, make the mashed potato topping. Boil the chopped potatoes in salted water until they are tender. Drain and mash with the butter and milk until smooth.
In a separate pan, soften the leeks in boiling water. Drain and mix with the grated cheddar cheese.
Once the filling has finished cooking, transfer it to an ovenproof baking dish. Spread the cheesy leeks mixture on top of the filling. Finally, top with the mashed potato, spreading it evenly over the leeks.
Bake in the oven for 20-25 minutes or until the top is golden brown and the filling is piping hot. Serve with steamed vegetables or a crisp salad on the side.
