Fresh Strawberry Crepe

Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1 1/2 cups milk

  • 1 teaspoon vanilla extract
  • 2 large eggs, room temperature

Instructions:

  1. In a large mixing bowl, whisk together flour, sugar and salt.
  2. In a separate bowl, whisk together milk, butter, vanilla extract and eggs.
  3. Add wet ingredients to dry ingredients and whisk until the batter is smooth and there are no lumps.
  4. Cover the batter and let it rest in the refrigerator for at least 30 minutes.
  5. Heat a non-stick skillet over medium heat. Grease the pan with cooking spray or butter.
  6. Pour about 1/4 cup of the batter into the skillet and swirl it around to create a thin layer of batter.
  7. Cook the crepe for 2-3 minutes or until the edges start to turn golden brown.
  8. Flip the crepe and cook for another 1-2 minutes or until the other side is golden brown.
  9. Remove the crepe from the skillet and repeat until all of the batter is used up.
  10. To assemble the crepes, fill each one with chopped strawberries and whipped cream. Roll up the crepe and serve.
