French Crepes Recipe
Ingredients
- 1 cup all-purpose flour
- 1 1/2 cups milk room temperature
- 2 large eggs room temperature
- 3 tablespoons unsalted butter melted and cooled
- 1 tablespoon granulated sugar
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1 teaspoon vanilla extract optional
Instructions
- In a large mixing bowl, whisk together the flour, sugar, salt, and baking powder.
- Add in the eggs and whisk.
- SLOWLY add in the milk, whisking constantly so that no lumps form.
- Mix in the melted butter, and vanilla extract (if using).
- Cover the bowl with plastic wrap and let the batter rest for 30 minutes at room temperature.
- Place a non-stick pan over medium-high heat.
- Use a ladle or measuring cup to pour about 1/4 cup (for small crepes) or 1/2 cup (for larger crepes) of batter into the pan for each crepe.
- Tilt the pan so the batter evenly coats the bottom of the pan with a thin layer.
- Cook for about 1-2 minutes, until the edges start to peel away from the pan and the bottom of the crepe is lightly golden brown.
- Flip the crepe using your fingers or a spatula and cook for an additional 1-2 minutes on the other side.
- Slide the crepe onto a plate and repeat with the remaining batter (don’t forget to use a little bit of melted butter between each crepe to keep them from sticking!)
