Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 1 pound ground meat (beef or pork)
- 2 cups sliced mushrooms
- 1 cup chopped zucchini
- 1/2 cup chopped carrots
- 1/2 cup chopped bell peppers
- 1/4 cup tomato paste
- 1/4 cup red wine (optional)
- 2 teaspoons dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions:
- Heat the olive oil in a large skillet over medium-high heat.
- Add the onion and cook until softened and translucent, about 5 minutes.
- Add the ground meat and cook until browned and cooked through, about 10 minutes.
- Add the mushrooms, zucchini, carrots and bell peppers. Cook until the veggies are softened, about 10 to 15 minutes.
- Add the tomato paste, red wine (if using), thyme, rosemary, salt and pepper. Cook until the tomato paste is well combined and the mixture is heated through, about 5 minutes.
- Remove from heat and let cool slightly before filling the crepes.
