If you’re in the mood for something sweet, these delicious crepes will definitely hit the spot! Made with vegan ingredients, this recipe is easy to make and super satisfying.

Berry Crepe

Berry Crepe

Ingredients:

  • 1 cup all-purpose flour
  • 1 1/2 cups plant-based milk (such as almond or soy)
  • 2 tbsp coconut sugar
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 tbsp vegan butter (such as Earth Balance), melted
  • 1 cup mixed berries (such as strawberries, blueberries, and raspberries)
  • 1/4 cup vegan whipped cream (optional)

Instructions:

  1. In a large mixing bowl, whisk together the flour, plant-based milk, coconut sugar, salt, and vanilla extract until smooth.
  2. Heat up a non-stick skillet over medium heat. Once the skillet is hot, pour about 1/4 cup of batter onto the skillet and swirl the skillet to evenly distribute the batter. Cook the crepe for about 2 to 3 minutes, or until the edges start to brown. Use a spatula to flip the crepe over and cook for an additional 1 to 2 minutes. Repeat the process with the remaining batter.
  3. Once all the crepes are cooked, fill each one with a handful of mixed berries and roll it up.
  4. Serve with a dollop of vegan whipped cream (optional) and enjoy!

Gluten-Free Buttercream Crepe Cake with Lemon Curd Topping

Ingredients:

  • 2 cups gluten-free all-purpose flour
  • 2 tbsp coconut sugar
  • 1/2 tsp salt
  • 4 eggs
  • 2 1/2 cups plant-based milk (such as almond or soy)
  • 1 tsp vanilla extract

  • 1 1/2 cups vegan buttercream frosting
  • 1/2 cup vegan lemon curd

Instructions:

  1. In a large mixing bowl, whisk the gluten-free all-purpose flour, coconut sugar, and salt together.
  2. In a separate mixing bowl, whisk the eggs, plant-based milk, and vanilla extract together until smooth.
  3. Add the wet ingredients to the dry ingredients and whisk until the batter is smooth.
  4. Heat up a non-stick skillet over medium heat. Once the skillet is hot, pour about 1/4 cup of batter onto the skillet and swirl the skillet to evenly distribute the batter. Cook the crepe for about 2 to 3 minutes, or until the edges start to brown. Use a spatula to flip the crepe over and cook for an additional 1 to 2 minutes. Repeat the process with the remaining batter.
  5. Once all the crepes are cooked, let them cool completely.
  6. To assemble the cake, place one crepe on a cake stand or plate. Spread a tablespoon of vegan buttercream frosting on top of the crepe. Place another crepe on top of the frosting and repeat the process until all the crepes are used.
  7. Once the cake is assembled, spread the remaining vegan buttercream frosting on top of the cake.
  8. Drizzle the vegan lemon curd on top of the cake and enjoy!
