Ingredients

• 1/2 cup all-purpose flour
• 1/2 teaspoon sugar

• 2/3 cup milk

• 2 tablespoons brandy

Instructions

1. In a large bowl, whisk together the flour, sugar, and salt.
2. In a separate bowl, whisk together the milk, melted butter, egg, and vanilla extract.
3. Add the wet ingredients to the dry ingredients and whisk until the batter is smooth.
4. Cover and refrigerate for at least 30 minutes.
5. In a small saucepan, combine the orange juice, softened butter, sugar, and orange zest.
6. Cook over medium heat until the butter has melted and the mixture is smooth.
7. Stir in the brandy and flame the sauce for 10 seconds, or until the flames have died down.
8. Set aside.
9. Heat a nonstick skillet over medium heat.
10. Using a 1/4-cup measure, pour the batter into the skillet and swirl around until the bottom is coated.
11. Cook for 1 to 2 minutes, or until the edges start to brown and the crepe releases from the skillet.
12. Flip the crepe and cook for an additional 30 seconds, or until the bottom is browned.
13. Transfer the crepe to a plate and repeat with the remaining batter.
14. To serve, fold the crepes in half, then in half again to form a triangle.
15. Arrange on a serving plate and spoon the orange-brandy sauce over the crepes. Top with strawberries and whipped cream, and serve immediately.
