Ingredients:
– 6 eggs
– 1 can of artichoke hearts (14 oz.), drained and chopped
– 1/4 cup grated Parmesan cheese
– 1/4 cup milk
– 1/4 cup chopped fresh parsley
– 2 cloves of garlic, minced
– Salt and pepper to taste
– 2 tablespoons of olive oil

5. Pour the egg mixture over the artichoke hearts in the frying pan. Cook for about 5-7 minutes, until the eggs start to set around the edges.

6. Transfer the pan to the oven and bake for 10-12 minutes, until the eggs are fully set and the top is starting to brown.

7. Take the pan out of the oven and let it cool for a few minutes. Then, slice it up and serve!

Now, if you wanna get even fancier, you can add some extra toppings to your frittata. Maybe some sliced cherry tomatoes on top, or some crumbled feta cheese. The possibilities are endless!
