- 1 small butternut squash, peeled and diced

- 6 bacon slices, chopped
- 1 small butternut squash, peeled, seeded and diced
- 1 yellow onion, diced
- 1 8 oz package sliced mushrooms
- 10 eggs
- 1/2 cup diced cheddar cheese
- 2 tbsp olive oil
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions:
- In a 10-inch ovenproof skillet, cook bacon over medium heat until browned and crispy, about 6 minutes. Remove and set aside.
- Add olive oil and butternut squash to the skillet and cook until tender, about 10 minutes. Add diced onion and sliced mushrooms and cook until tender, about 5 minutes.
- In a large bowl, whisk the eggs until well beaten. Add salt and pepper and mix well. Pour the egg mixture over the vegetables and stir to distribute the vegetables evenly.
- Sprinkle cooked bacon and cheddar cheese over the top of the frittata.
- Place the pan in the preheated oven and bake for 25-30 minutes, or until the frittata is golden brown and firm in the center.
- Remove from the oven and let cool for a few minutes. Cut into wedges and serve.
