We’ve found two different versions of this recipe and we think both are delicious, so we’ve combined them into one recipe for you to enjoy!
Caramelized Onion and Zucchini Frittata
Ingredients:
- 1 tablespoon olive oil
- 1 onion, thinly sliced
- 1 zucchini, thinly sliced
- 6 eggs, beaten
- 1/4 cup milk
- 1/4 cup Parmesan cheese, grated
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Preheat oven to 375 degrees F (190 degrees C).
- Heat olive oil in an oven-safe skillet over medium heat.
- Add onions and cook until caramelized, about 20 minutes.
- Add zucchini and cook until tender, about 10 minutes.
- In a bowl, whisk together eggs, milk, Parmesan cheese, salt, and pepper.
- Pour egg mixture into skillet with onion and zucchini.
- Place skillet in preheated oven and bake until frittata is set, about 15-20 minutes.
- Remove from oven and let cool for 5 minutes.
- Serve and enjoy!
Tip: If you don’t have an oven-safe skillet, you can cook the frittata on the stove over low heat until slightly set, then transfer the skillet to a preheated oven and finish cooking.
Easy Potato and Caramelized Onion Frittata
Ingredients:
- 1 tablespoon olive oil
- 1 onion, sliced
- 3 potatoes, sliced
- 6 eggs, beaten
- 1/4 cup milk
- 1/4 cup Parmesan cheese, grated
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Preheat oven to 350 degrees F (175 degrees C).
- Heat olive oil in an oven-safe skillet over medium heat.
- Add onions and potatoes and cook until caramelized and tender, about 20 minutes.
- In a bowl, whisk together eggs, milk, Parmesan cheese, salt, and pepper.
- Pour egg mixture into skillet with onion and potato.
- Place skillet in preheated oven and bake until frittata is set, about 15-20 minutes.
- Remove from oven and let cool for 5 minutes.
- Serve and enjoy!
Tip: You can use any type of potato for this recipe, but we recommend using Yukon gold or red potatoes as they tend to hold their shape better.
