Chorizo, kale and apple frittata

Ingredients:

  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 8 ounces chorizo sausage, casing removed and crumbled
  • 1 apple, peeled and diced
  • 4 cups kale leaves, stemmed and chopped
  • 6 eggs, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat oven to 350 degrees.
  2. In a large oven-safe skillet, heat olive oil over medium heat.
  3. Add onions and sauté until translucent.
  4. Add chorizo and cook until browned, breaking up any large pieces.
  5. Add apples and cook until tender, about 5 minutes.
  6. Add kale and cook until wilted.
  7. In a separate bowl, whisk together eggs, salt, and pepper.
  8. Pour egg mixture over the chorizo, kale, and apple mixture in the skillet.
  9. Cook for 4-5 minutes over medium heat, stirring occasionally, until the eggs start to set on the bottom, but are still runny on top.
  10. Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the eggs are fully set and the top is slightly golden.
  11. Remove from oven and let cool for a few minutes before serving.
