Vegetable Frittata Recipe Without Cheese
Here is what you will need to make this delicious and healthy frittata:
Ingredients
- 6 eggs
- 1/2 red onion, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup kale, chopped
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F.
- Heat a 10-inch oven-safe skillet over medium heat. Add olive oil, onion, bell pepper, and zucchini to the skillet and cook until the veggies are softened, about 5 minutes.
- Add garlic and kale to the skillet and cook for another 2-3 minutes.
- Whisk eggs in a bowl with salt and pepper.
- Pour the egg mixture over the veggies in the skillet and cook until the bottom is set, about 5 minutes.
- Transfer the skillet to the oven and bake until the frittata is set and golden brown on top, about 10-12 minutes.
- Remove from the oven and let cool for a few minutes before slicing and serving.
This dairy-free and egg-free frittata recipe is another great option for those with allergies or dietary restrictions. It uses tofu as a replacement for the eggs, but is still packed full of flavor!
Egg-Free Dairy-Free Frittata Recipe

- 1 package firm tofu, drained and crumbled
- 1 red bell pepper, diced
- 1 yellow onion, diced
- 2 cups spinach
- 1 medium sweet potato, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat your oven to 375°F.
- Heat a 10-inch oven-safe skillet over medium heat. Add olive oil, onion, and sweet potato to the skillet and cook until the sweet potato is softened, about 8-10 minutes.
- Add bell pepper, spinach, and garlic to the skillet and cook for another 2-3 minutes.
- Whisk crumbled tofu in a bowl with salt and pepper.
- Pour the tofu mixture over the veggies in the skillet and cook until the bottom is set, about 5 minutes.
- Transfer the skillet to the oven and bake until the frittata is set and golden brown on top, about 10-12 minutes.
- Remove from the oven and let cool for a few minutes before slicing and serving.
