Bell Pepper Frittata

Ingredients:

  • 6 eggs
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Preheat the oven to 375 degrees F.
  2. In a large bowl, whisk together the eggs, Parmesan cheese, salt, and pepper.

Baked Frittata with Arugula, Portobello & Feta
